Cauliflower CheeseCrispy Cauliflower Cheese

The only partner to sausages! This classic dish takes on a new twist with a crispy edge.

Serves 4

 

600g cauliflower, cut into small florets
50g butter
25g plain flour
450ml milk
1/2tsp cayenne pepper
4 slices Seriously Farmy Cheddar Cheese
2 rashers streaky bacon, finely chopped
25g breadcrumbs
1tbsp chopped parsley

  1. Preheat the oven to gas mark 5 /190°C / 375°F and bring a pan of salted water to the boil. Plunge florets into boiling water, bring back to the boil and cook for 3-4 mins until nearly tender. Drain thoroughly.
  2. Melt the butter in a pan and add the flour. Cook for 1 minute stirring constantly. Reduce the heat to the lowest temperature and gradually whisk in the milk, continually stirring until thicken. Season with cayenne pepper and set aside.
  3. Put the cauliflower in an ovenproof dish, pour over the white sauce, arrange cheese slices on top and scatter over bacon and breadcrumbs. Bake for 30 mins until golden. Scatter over parsley and serve.
