Courgettes and mushrooms risotto with Dolcelatte®

Serves 4
Prep: less than 30 minutes

 

  • 1 tbsp olive oil
  • 1 small red onions, chopped
  • 1 glass of white dry wine
  • 2 medium courgettes
  • 100g mushrooms
  • 200g risotto rice
  • 1 litre of stock
  • 100g Galbani Dolcelatte® classico
  • Salt and freshly ground pepper
  • 50g rocket salad
  1. Heat the olive oil in a saucepan; add the chopped onion.
  2. After a couple of minutes, add the rice and sauté for a few more minutes, then pour white wine into it.
  3. Cook the rice for 5 minutes and add the sliced courgettes and mushrooms, adding some broth from time to time.
  4. Cook for another 10-12 minutes.
  5. Pour the rice in a serving platter, garnish with cubes of Dolcelatte® classico, a few leaves of rocket and a pinch of freshly ground pepper.
